The Empress Carlota Legend

Legend says cascarones, confetti filled eggshells, reached Mexico in the mid 1800s via Empress Carlota, Maximilian's wife. Locals are said to have swapped the old perfume filling for confetti, cracked for luck.

A Governor Breakfast, Now National

Huevos motulenos, fried eggs on tortillas with beans, ham, peas and fried plantain, were first plated in Motul, Yucatan, for a visiting governor and his companions in the 1920s, and grew into their own dish over the last century.
